Parmesan Crusted Pork Loin

Truckin' Dad BBQ's Parmesan Crusted Pork Loin with Bacon Brussel Sprouts

Parmesan Crusted Pork Loin

 INGREDIENTS:

1 6lb True North Meats Heritage Pork Loin
3/4 cup mayonnaise
1 pkt ranch mix (I prefer Uncle Dan's but any will do)
2 T parmesan seasoning (we use Swags Parmesan Wing Dust seasoning)
1/2 cup shredded parmesan cheese
3/4 cup bread crumbs

DIRECTIONS:

  1. Preheat grill to 275°F
  2. Combine mayonnaise, ranch mix, parmesan seasoning, and shredded parmesan cheese in a small bowl. Coat outside of pork loin with mixture
  3. Sprinkle bread crumbs over mayo mixture
  4. Slow cook pork loin until it reaches an internal temperature of 130°F
  5. Increase grill heat to 500°F to brown the crust, and pull pork loin off at 145°F (or whatever your desired finish temperature is)
  6. Let rest for 5-6 minutes, slice and enjoy!

Bacon and Brussel Sprouts
1lb True North Meats Heritage bacon
1lb brussel sprouts

  1. Halve brussel sprouts
  2. Cut bacon into roughly 1” squares
  3. Brown bacon in frying pan until slightly underdone (we used a cast iron skillet)
  4. Remove bacon and add in brussel sprouts (we seasoned with a little bbq seasoning). Cook brussel sprouts in bacon grease until almost done
  5. Add bacon and cook with a lid on until you reach desired doneness for both bacon and brussel sprouts

Potatoes
1lb baby tri color potatoes

  1. Toss in oil and season (we used the same parmesan seasoning as the pork loin)
  2. Put in the air fryer at 400° until desired doneness.
